The Bilona Process

Five steps. No shortcuts. Here's exactly how your ghee is made.

Desi Cow’s Milk

It Starts With the Right Cow

It Starts With the Right Cow Every batch begins with milk from our desi cows. We still milk by hand instead of machines — not because it’s easier, but because we believe how the milk is taken matters just as much as where it comes from. Care for the animal comes first; everything else follows from that.

Slow Boiling on a Clay Stove

Patience, Boiled In

The fresh milk is simmered slowly over a traditional clay stove (chulha). No rushing this part — slow heat is what protects the milk’s natural richness instead of stripping it away.

Curd Setting in Clay Pots

Set the Old Way, in Clay

Once boiled, the milk is set into curd inside clay pots, exactly how it was done generations ago. The clay isn’t just tradition for tradition’s sake — it genuinely helps hold onto the flavor and the natural goodness while the curd sets overnight.

Traditional Wooden Churning

Churned by Hand, Not by Machine

The curd is churned slowly with a wooden bilona (traditional wooden churner) until the pure butter separates on its own. No highspeed machines touch this step — just steady, deliberate hand-churning, the same way it’s always been done.

Slow-Cooked Into Ghee

Where It All Comes Together

The churned butter (makhan) goes back onto the clay stove one last time, cooked slowly until it turns into golden, aromatic ghee — with that signature daanedaar (grainy) texture you can see and feel. This is the ghee that reaches your kitchen.

FAQs

Shipping

Storage & Shelf Life

How long does it stay fresh?

Up to 12 months from the date of manufacturing, when stored correctly.

Why has my Gauveda A2 Cow Ghee turned solid?

It is completely natural for pure cow ghee to solidify or become grainy depending on the surrounding temperature. Ghee contains naturally occurring fats that change texture with temperature fluctuations. This is a normal characteristic of ghee and does not necessarily indicate a change in its quality. You can gently warm the ghee to return it to a liquid consistency.

Authenticity & Quality

How do I know GauVeda Ghee is genuine A2 cow Ghee?

Every batch is lab-tested and FSSAI certified, with reports available on our Lab & Quality page. We source exclusively from farms raising indigenous A2 cow cows.

Which breed of cows does Gauveda source its milk from?

Gauveda sources its milk from Malvi cows, an indigenous Indian cattle breed known for its adaptability to local conditions. We value traditional dairy practices and focus on bringing the natural goodness of indigenous cow milk to your home.
